Chinese Chicken Salad
2 1/2 cups | Iceberg lettuce |
3 oz | Grilled chicken breast strips |
1/4 cup | Carrots cut match stick |
1 tbsp | Green onions chopped |
1 tbsp | Almonds slivered and toasted |
1/2 tbsp | Sesame seeds toasted |
1 tbsp | Asian dressing as purchased |
Chicken Caesar Salad
2 1/2 cups | Romaine lettuce chopped |
3 oz | Grilled chicken breast strips |
1/2 tomato | Cut into wedges |
1 tbsp | Parmesan cheese freshly shredded |
1/4 cup | Croutons (optional) |
1 tbsp | Lite Caesar dressing as purchased |
Greek Salad with Greek Dressing
Salad
2 1/2 cups | Romaine lettuce chopped |
1 | Roma tomato chopped |
1/4 cup | Cucumber peeled and chopped |
2 tbsp | Red onion chopped |
6 | Black olives pitted medium whole |
1 oz | *Tomato basil feta cheese chopped |
1 tbsp | Greek dressing – see recipe below |
*may be substituted with tuna canned flaked 2 oz
Dressing (makes 8 tbsp)
Whisk together:
1 lemon | Freshly squeezed juice from 1 lemon |
3 tbsp | White wine vinegar |
3 tbsp | Olive oil |
1 clove | Garlic clove fresh minced |
1/2 tsp | Dried oregano flakes |
Salt/pepper to taste |
Broccoli Slaw Salad with Broccoli Slaw Dressing
Salad
2 1/2 cups | Broccoli slaw as purchased |
1/3 cup | Broccoli florets |
1/4 cup | Red bell pepper chopped |
2 oz | Tofu five spice flavored cubed |
1 tbsp | Cilantro chopped |
1 tbsp | Green onion chopped |
1 tbsp | Dry roasted peanuts chopped |

Broccoli Slaw Dressing (makes 4 tbsp)
Whisk together:
2 tbsp | Roasted sesame oil |
2 tsp | Rice wine vinegar |
1 tsp | Sriracha sauce or chili garlic sauce |
2 tsp | Sugar | Salt/pepper to taste |
